SORGHUM (JAWAR)

Ingredients :

  • Sorghum flour
    - 100 gm
  • All Purpose flour(Maida)
    - 100 gm
  • Cow Ghee
    - 50 gm
  • Suger
    - 100 gm
  • Green cardamom powder
    - 1 gm
  • Curd (optional)
    - 50 gm
  • Baking powder
    - 1 /6th tsp
  • Refined Oil
    - 0 for frying
  • Salt
    - 0 as per taste

Preparation Method :


  • Take All purpose flour (Maida) and sorghum flour.
  • Add baking powder, salt and ghee into it. Mix well.
  • Add curd and make dough. Keep it aside for 20 to 25 minutes to set.
  • In then meanwhile, take sugar in a pan, add half glass of water to it.
  • Turn on the flame, cook until the sugar dissolves in water.
  • Stir the syrup regular inter vals check it. When single thread is formed in syrup switch off the flame.
  • Add cardamom powder and keep it aside with a co ver, so that it doesn't cool down quickly
  • After 25-30 minute, knead the dough slightly
  • Make small balls, to shape the Balushahi, lift a dough ball, give it a round shape. Press it and make a hole from both sides.
  • Place the shaped Balushahi in a plate. Make all the Balushahi in this way.
  • Heat oil in a heavy based kadhai in a low flame, Put the 7-8
  • Balushahi (Depend upon kadhai size) into hot ghee/refine to fr y.
  • Fry on low flame, when Balusahi float over the oil, flip them.
  • F ry well until golden brown from all sides.
  • When it ready, take out the Balushahi and drop it in sugar syrup. Dip it for 20 to minutes.
